Key Lime Cake

MIX
1 Box lemon cake mix
1 small lime jello
ADD
½ Cup Orange Juice
1 ½ Cups cooking oil
5 eggs
Blend all until smooth, pour into cake pans and bake @ 350 for 25-30 minutes (Test with toothpick).
While cake is still warming in cake pan mix the following and pour over warming layers:
½ Cup lime juice and ½ cup powdered sugar
Icing
1 ½ sticks melted butter
12 Ounces of soft cream cheese
1 ½ Boxes of confectioners sugar (Add more if you think it needs it)
1 tablespoon Lime juice
Blend until smooth. Ice Cake and ENJOY!!!
NOTE: You can add green food coloring to the icing to make the cake Pretty. Actually,
you can make it any color you wish. Red for Valentines Day or Christmas.

Southern Cornbread

1 ½ cup buttermilk
1 ½ cup cornmeal
½ cup flour
¼ cup shortening
2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
½ teaspoon baking soda
2 eggs
round pan
Heat oven to 450 degrees. Grease bottom and side of pan with shortening. Mix all
ingredients in a bowl and beat for 40 seconds. Pour contents of bowl into pan. Bake approx
25 to 30 minutes or until brown. Best when eaten warm.

Meatloaf

3 slices of bread (broken into small pieces)
1 ½ lb lean ground beef
1 cup milk
1 tablespoon BBQ sauce
1 small onion
1 egg
½ teaspoon salt
½ cup ketchup
Heat oven to 350 degrees. Mix all ingredients except ketchup in loaf pan. Spread ketchup
over the top. Bake uncovered approx 60 to 75 minutes (until middle is no longer pink and
juice is clear). Let stand for 5 minutes. Remove from pan.

Ole Fashion Coleslaw

1 head of cabbage
1 medium onion
½ pint of mayo (more if you like it juicy)
3 generous tablespoons of pickle relish (okay to add a little pickle juice, too) salt and
pepper as you like (black pepper is essential for good coleslaw)
Shred and chop cabbage until very fine and place into bowl. Add onion, mayo, pickle relish,
salt and pepper. Let stand for about 3 hours in the refrigerator before serving.

Chocolate Puddin’

1/2 cup sugar
1/3 cup baking cocoa
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups milk
2 egg yolks, slightly beaten
2 teaspoons vanilla
1 tablespoon butter
Mix sugar, cornstarch and salt in 2 quart pan. Stir in milk. Cook over medium heat, continue
stirring until thickens and boils. After boils, stir for one more minute. Gradually stir half of the
pan into bowl containing 2 egg yolks. Stir briefly then pour all bowl contents into pan. Boil
and stir for one more minute then remove from heat. Stir in butter and vanilla. Either pour
into large bowl or individual bowls, cover and refrigerate about one hour or until chilled.
